ginger ale

you'll need 225 g sugar, 3 tablespoons freshly grated ginger (don't bother peeling it), 1/2 teaspoon instant yeast and the juice of one lemon. add all the ingredients to a plastic bottle and fill with water.

leave a little head space and shake well. the sugar should dissolve. place in a warm location for a day or two. the fermentation of the yeast and sugar will get the carbonation going! the lemon will keep the ph level in check.
